This recipe is a modified version of Alton Brown's "Instant" Pancake Mix recipe coz... I didn't have all ingredients in my kitchen pantry, the quantity is too big (unless you want to keep the dry Pancake Mix for future use) and I like the pancake to be a little bit more on the sweet side. I made it as the savoury type when I have it with the Taco style beef.

Nevertheless, Alton's recipe is the best recipe that I've tried - the texture is so so light...

Byron never refuses pancake and cs.. picklets, crepes.. hmmm apalagi yah?

Dry Ingredients (Mix):

2 cups plain flour

2 tbsp sugar (reduce to 1 tbsp for savoury use)

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Wet Ingredients (Mix):

5 tbsp milk powder

1.5 cups water

3 tbsp white vinegar

2 large egg

3 tbsp canola oil or other light flavoured oil

1 tsp vanilla extract (1/2 tsp for savoury dish)

Method:

1. Mix dry and wet ingredients separately. This will help to reduce the mixing time so the mixture won't be overmixed. This can cause the pancake having tough/ruberry texture. Why? It's because of the gluten formation.

2. Mix milk, water and vinegar. Add egg, vanilla extract and oil. Combine wet ingredients to the dry ingredients with a whisk or big metal spoon. Stir and fold them gently until just combine. Don't worry about the lumps. Just like mixing the batter for cake.

3. Put 1/4 cup of the batter on the buttered pan. If you want to have a bubbly appearance on the surface, use a little bit more butter (visible on the pan surface). If you want to have a smooth brown surface on the pancake, put a little butter on the pan and wipe it off (no butter should be visible).

4. Cook until one side has bubbles and flip gently. Cook until the pancake is set.

5. Serve with butter and strawberry jam or fresh berries

Savoury Alternative:

Make the beef taco filling using Casa Fiesta Taco Seasoning Mix. Serve the pancake with the taco sauce, salsa sauce, refried beans, cheese, shreded lettuce and tomato.

Update 21/4/07:

- I highlighted the key of making them fluffy.

- If you have buttermilk, replace water, milk powder & vinegar. Use 1.5 cups or + 3 Tbs buttermilk depending how runny you want.

- The flufiness of the pancake keeps for the whole day.
