Description:Whatever you call this dish with a fancy name in different languages, it is basically fried egg and it can come with some toppings/fillings. The dish that I make here is similar to Pa'jeon (Korean Style Spring Onion Pancake).

Ingredients:Egg Base:
4 eggs, extra large, whisked
a dash of sea salt
black pepper, coarsely ground
200 g mince pork (can be subtituted with mince chicken or seafood mix)
1 small onion, cut thinly
1 spring onion, cut diagonally and thinly
1/4 red capsicum, cut thinly or red chilli if you like it hot
vegetable oil
Sauce - mix in a small bowl (From Kylie Kwong's Simple Chinese Cooking):
1 Tbsp oyster sauce
2 tsp malt vinegar
0.5 tsp sesame oil
Directions:1. Heat half a tablespoon of oil on a frying pan on high heat and saute mince pork until cook. Put aside the cooked mince pork on the plate.
2. Put half a tablespoon of oil on the pan and saute onion until transparent. Put aside with the pork.
3. Clean the pan then heat half a table spoon of oil on the pan on medium high heat. Pour the egg and reduce the heat to low. Scatter pork and onion on the egg then top with spring onion and red capsicum. Cook until egg quite set
4. Turn on the grill and put the pan under the grill (Make sure that the pan can withstand high heat). Otherwise, cover the pan with a lid and continue cooking on the stove until the egg is set.
5. Sprinkle the sauce on top of the fried egg.
