Chinese Indonesian style of noodle :D

It was my lunch last Saturday. I combined the recipes from Ci Ine's and Mbak Esther's blogs. I did not use the chicken oil since I wanted to reduce the saturated fat consumption.

All volume are measured with US measuring spoons

Ingredients:
8 portions of fresh egg noodle, dried egg noodle or ramen

2 Tbsp peanut oil
15 g garlic, finely minced
750 g chicken breast fillet, cut into cubes 1x1 cm
Mushroom/champignon, optional

2 Tbsp shao xing wine
2 Tbsp choy sun oyster sauce, Lee Kum Kee
0.5 Tbsp light soy sauce, Kikoman
1 tsp caster sugar
0.5 tsp sesame oil, Chang's
0.5 tsp white pepper
0.25 tsp dark soy sauce, Superior Soy Sauce

1 tsp corn starch mixed with 2 tsp water


Flavoured oil
120 mL olive oil, extra light, Carapelli (Italian olive oil... fanantic nih...)
3 garlic, smashed
1 thin slice ginger

Boiled choy sun or other leavy green vegetables
Fried wonton
Beef balls
Chicken stock
Garlic chilli sauce


Directions:
Stir Fried Chicken:
1. Heat up the oil and saute garlic until fragrant. Add chicken and cook until change colour on high heat.
2. Add seasoning and mix well. Cook until chicken is cooked through.
3. Add corn starch slurry and cook until thicken.

Flavoured Oil:
1. Heat up oil on a pan until reaching 170 deg C. Remove from heat.
2. Add garlic and ginger. Cook until garlic turns to light brown. Remove or leave the garlic cloves and the ginger slice.
3. Cool the oil. Keep in an air tight glass jar.

Assemble:
1. Put 0.5 Tbsp flavoured oil and 0.5 Tbsp light soy sauce on a bowl.
2. Boil noodle until cook and mixed with the flavoured oil mixture.
3. Serve with chicken, vegetable, fried wonton and beef balls.



I got the recipe from Hilaire Walden's Korean cooking book. I have cooked this once for the mother's day lunch last year. I will post the photo when I cook the dish again *  *

The dish is simple, light and delicious. It can be served as appertizer or as a main meal. I read in someone's website that the dish can be served cold as appetizer. Other version adds sliced beef in the dish. The quantity of the ingredients has been modified to suit my taste. I omit most of the mushrooms since my husband is not a big fan of it.

Here is the recipe. Make sure that the vegetables are cut thinly so they can blend well with the noodle.

 

Ingredients

 

100 g cellophane noodle, soaked for 30 minutes and drained

 

6 dried Chinese black mushroom, soaked in hot water for 30 minutes

150 g baby spinach, boil for 2 minutes, drain and squeeze water, separate

2 cabbage leaves, finely shredded

2 spring onion, sliced thinly diagonally

1 small courgette, fine strips

1 small carrot, fine strips

 

2 Tbsp vegetable oil

1 Tbsp black sesame oil

2 cloves garlic, crushed & chopped finely

 

1 Tbsp soy sauce, Yamasa

1 tsp sugar

Salt

White pepper

 

 

Cooking Methods

 

Saute garlic in oil

 

Stir fry vegetables for 3-4 minutes on high heat

 

Reduce heat, add noodle and seasoning, cook for 2 minutes

Ini makanan dapat inspirasinya pas makan malam di Shark Fin Inn, Keysborough. Aslinya pake bebek panggang yg dicampur dgn acar timun, wortel, bangkwang, lobak, kacang tanah dan mi goreng kering. Ya sudah, aku coba2 aja cari resep rojak ala Singapur dan Malaysia.

Ini paertama kalinyaku  bikin bumbu rojak, gak tahu seberapa banyak shrimp pastenya dan ngikut aja resepnya yg dapet dari http://www.malaysianfood.net/recipes/reciperojak.htm. Waduh, 1 sdm stinky banget deh. Jadinya mesti dirubah sedikit resepnya. Ini rojak, isinya bisa suka2, mau buah2an, sayur2an atau dicampur dgn daging (kayaknya sih cocok dgn daging ayam, bebek, ikan dan babi).

Anyway, ini dia resepnya, yang jelas sih bukan utk cooking for the rushed.

 

Isi si Mi Ayam:

1/2 bungkus Chang's crunchy noodle (mending beli daripada goreng sendiri)

3 sdm slivered almond, sangrai

2 sdt biji wijen, sangrai

1/4 nanas matang segar, potong kecil

1/2 ketimum continental, iris ukuran korek api, buang bijinya

1/2 wortel ukuran sedang, iris ukuran korek api

1/2 sdm garam

1/2 sdm gula pasir halus

3 sdm malt vinegar

1 dada ayam fillet, iris tipis melintang (spt bikin chicken parma), ketebalan sekitar 0.5cm

3 sdm dark soy sauce

2 sdm Shao Xing wine

2 sdt minyak wijen

1/2 sdt five spice mix

1 star anise, keprek

 

Cara Membuat:

Acar ketimun dan wortel

1. Irisan ketimun dan wortel diberi garam dan didiamkan 30 menit. Taruh di kulkas. (Sementara nunggu, siapkan si ayam)

2. Kemudian tiriskan airnya dan cuci 2 kali dengan air. Keringkan dengan tisue dapur. Taruh cuka dan gula di mangkuk dan aduk. Masukkan ketimun dan wortelnya. Diamkan 10 menit di kulkas.

Ayam saus kecap

1. Rendam ayam dalam bumbu kecap, arak, minyak wijen, five spice mix dan star anise. Diamkan sekitar 30 menit.

2. Tiriskan dari bumbu perendam. Panggang ayam di wajan datar (non-stick pan) tanpa minyak sampai matang, kira2 3 menit per sisi. Diamkan ayam diwajan sampai dingin.

3. Iris ayam melintang seratnya tipis2, sekitar 0.5 cm. Dinginkan di kulkas sekitar 10 menit.

 

Isi Bumbu Rojak (bikin bumbu sewaktu menunggu acar dan ayam):

1/4 - 1/2 sdt shrimp paste matang (tergantung sukanya)

3 sdm gula jawa atau brown sugar

2 sdt brown sugar

1 sdm chilli paste (aku pakai LKK Guilin Chilli Sauce) atau dapat diganti chilli powder (takaran sesuai kemampuan lidah)

2-3 sdm tamarind paste (from 2-3 pulps + 4 sdm hot water)

1 sdm oyster sauce

1/3 cup air

2 sdm hoisin sauce

 

Cara Membuat:

1. Masukkan semua bumbu ke dalam panci kecil

2. Rebus sambil diaduk2, sampai gula mencair

3. Masak dgn api kecil sampai kental (spt saus karamel). Sausnya rada2 kental supaya bisa melapisi isi Mi Ayam, biar gak runny.

 

Assembly:

1. Tiriskan acar ketimun dan wortel dari cuka

2. Campurkan ayam, ketimun, wortel, almond, biji wijen dan bumbu rojak secukupnya.

3. Taruh mi kering di piring dan tambahkan campuran ayam di atas mi.

4. Hidangkan dalam keadaan dingin.

 

Eh, aku lupa nulis kalo ini makanan dibuat utk MFM #3 yg dihost oleh Ci Irma dgn tema Mi dan Pasta.

Kemarin masak mi goreng karena mudah dan hasilnya biasanya melimpah untuk keesokan harinya. Isinya bisa terserah adanya di kulkas dan lemari dapur. Yang ini ya tentu saja rasa rada2 Jawa Cina. Kalo yang gak suka babi, silahkan ganti dengan ayam, udang dsb.. Yang penting enak...

 

Bahan:

5 mi telor instant (aku pake merk Fantastic), rebus dengan air panas sampai setengah matang

1 medium onion, iris tipis

3 siung bawang putih, cincang halus

3 siung bawang merah, iris halus

5 lembar short bacon, potong kotak2 (2 x 1 cm)

8 butir baso babi goreng (tinggal beli jadi di Caulfield), potong2 jadi 1/4

1 wortel, iris korek api

2 tomat sedang, potong kotak2

1/4 kol, iris tipis

3 butir telur

3 sdm sambal ulek

2 sdm kecap asin

2-3 sdm kecap manis

2 sdm arak masak

garam, merica putih, minyak goreng

Cara Membuat:

  1. Taruh telur di mangkok, kasih sedikit garam dan merica. Goreng dadar. Potong kotak2 atau aduk2 ketika menggoreng. Sisihkan.
  2. Tumis bawang2 dengan minyak sampai layu, masukkan bacon dan tumis sampai berubah warna.
  3. Tambahkan baso babi, aduk2 sampai hangat.
  4. Tambahkan kol dan wortel, aduk2
  5. Tambahkan arak masak. Masak sampai kol agak2 transparan. Sisihkan.
  6. Rebus mi sampai setengah matang, angkat dari air dan taruh di piring.
  7. Sisakan sedikit sisa air rebusan (sekitar 1/2 cup)
  8. Panaskan air sampai mendidih, tambahkan kecap asin, kecap manis, sambal ulek dan sedikit minyak (kira2 1 sdm). Aduk2.
  9. Masukkan mi ke dalam campuran kecap. Aduk2 sampe, mi kecoklatan dan air meresap ke mi tsb. (maksudnya biar mi gak hancur dan mudah ngaduk kecapnya).
  10. Tambahkan campuran daging dan telur. Aduk2.
  11. Kalo susah ngaduknya, potong2 mi dengan gunting biar pendekan dikit.
  12. Tambahkan tomat, aduk sampe tomat hangat.
