I got the idea from the spicy rice at Nando's but my version has more vegetables and onion. I guess it is sort of the Portuguese style fried rice. The taste hmm... yum.
 

 

 

 

 

Ingredients

 

1 cup long grain or medium grain rice

350 mL water, adjust according to the type of rice

½ tsp turmeric powder

½ tsp parsley flake

½ tsp oregano

 

½ onion, medium size, chopped finely

2 cloves garlic, chopped finely

oil

 

½ cup red capsicum, chopped finely

½ cup green capsicum, chopped finely

1 tomato, small, remove seeds & chopped finely

Sea salt

 

 

Cooking Methods

 

  1. Wash rice about 3 times until water is quite clear
  2. Put rice in the rice cooker bowl, add water and the herb and spices
  3. When the rice is cooked, cool slightly then open the lid and stir the rice
  4. Heat oil in a wok at medium heat then add onion and garlic. Sauté until fragrant
  5. Add rice and stir fry until slightly dry
  6. Add the remaining ingredients. Cook until vegetables are slightly soft but still crunchy.

 

Note:

 

I usually make fried rice with rice fresh from the rice cooker as I don't normally have left over rice. I cooked it just enough for 4 meals. The trick is to slightly reduce the amount of water so that the fried rice will not go soggy. After successfully making fried rice with 'freshly cooked rice' many times, I don't believe the so called secret of making nice fried rice is only by using left over rice from the night before.

Kali ini nyoba bikin nasi uduk pake rice cooker, biar cucian lebih sedikit. Udah pernah nyoba beberapa kali tapi nasinya masih keras melulu dan akhirnya dibuang karena kelembekan dan hacur setelah ditambah air berkali2. Mungkin karena si garam dan si santan yg bikin si nasi susah matengnya ya?

Akhirnya nyoba masak nasinya sampai setengah matang dan kemudian ditambahkan cairan santannya.

Bahan & cara:

1. Taruh 250 g beras long grain di panci rice cooker, cuci dan tiriskan. Masukkan 200 ml air utk memasak nasinya.

2. Buat cairan santan di panci kecil dan didihkan:

  - 200 ml air

  - 2 sdm munjung santan bubuk

  - 1/4 sdt ketumbar bubuk

  - 10 cm serai yg bagian hijaunya, geprek

  - 1/2 daun pandan, ikat

  - 1 iris jahe

  - 1 bay leave

  - 1/4 sdt garam

3. Waktu air di rice cooker sudah mengering (tidak ada lapisan air dipermukaan nasi), tambahkan santan panas dan campur rata. Masak sampai matang.

Udah dari beberapa hari yang lalu pengen makan nasi uduk. Terus kemarin bikin dgn resep dasar dari nasi uduk betawi yang ditulis di melroseflowers tapi dimasak di rice cooker tanpa mempertimbangkan jumlah air. Kelihatannya tu air udah cukup tapi... ternyata kurang jeh.. Alhasil terakhirnya kebanyakan air dan nasinya terlalu lembek dan kurang gurih.

Hari ini aku masak dengan kukusan dan dimodifikasiin sedikit dgn resep nasi lemak. Ukurannya disesuaikan dgn jumlah orang di rumah = 2.

Bahan:

200 g beras

1/2 bungkus santan bubuk

350 mL air hangat

1/4 sdt ketumbar bubuk

3 cm serai bagian tengah, geprek

1/2 lembar daun pandan

1 bay leave segar, kecil

1 iris jahe

1/2 sdt garam, atau sesuai selera

Cara:

1. Kukus beras sampai setengah matang

2. Didihkan santan bubuk, air, ketumbar bubuk, daun pandan, serai, jahe dan garam.

3. Masukkan beras dan aduk di atas api kecil sampai air mengering

4. Kukus beras sampai matang

5. Sajikan dengan bawang goreng, sambal, ayam goreng, telur dadar, keripik kentang, kacang, tomat dan ketimun.

 

Telur Dadar

5 biji telur

2 batang daun bawang, iris halus

1/2 wortel, serut kasar

merica

kecap asin

Cara:

Aduk rata semua bahan dan goreng

 

Tips cepat:

- Keripik kentang - pake merk Kettle rasa chilli - asli garing. No added MSG - jadi gak gampang haus. Better than Smith's.

- Kacang - packed unsalted peanuts
